Indeed roleplaying a thief can be a little tricky, but it is also very rewarding, you simply have to go about it in the right way. Staying hidden and then stealing and pegging it isn't very fun for either party, just use your imagination and be inventive in your approach.
Why not befriend your target? It gives you an IC excuse to say.. start patting them on the back, shake their hand, anything really (this is touching for stealing purposes, for the record, not molesting purposes...) I find it's best to always emote what you're doing, obviously you don't have to emote '*Steals*', you can be far more subtle.
Perhaps adapt a disguise that would provide opportunities for stealing, maybe pretend to be a tailor, and 'measure' those rich folks for suits, helping yourself to a few coins while you're at it.
Why even limit yourself to the stealing skill? There are lots of artful ways of relieving people of their belongings. Pose as a doorman at taverns, collecting peoples coats/cloaks for them. Try running some scams, fix some table top games and encourage gambling.
These are just a few examples, you really do have to use your imagination to make life as a thief fun for both parties. (And you'll still get a healthy amount of people that will instantly knock you when they notice you taking something *grins*).
Still though, it's great fun when/if you get into the swing of things, and try something other than what you'd typically see people doing in Fel.
