I haven't played it on either platform, so I can't comment for certain...
But, apparently they've got different visual setting on each console. It's a funny anecdote, to raise that the PS3 runs in a lower resolution. But, doesn't the PS3 have more powerful video hardware?
Maybe they're using shinier filters/shaders/whatever.
Or, maybe it's just fanbois :/

Actually you will find that most games available for both Xbox360 and PS3 will run in higher resolution (up to 1080i/p generally) on the Xbox360 ... It is but one of the reasons why I tend to give preference to Xbox360 versions when I have a choice.
